An outstanding evening ... turns out that my favorite cake decorating supply house hasn't gone out of business after all. They simply moved, closing the new store in the expensive strip mall in the process. Their latest location is a lot like the first one -- an out-of-the-way hole in the wall, jam-packed with stuff. Reminds me of an old five-and-dime store (am I dating myself too badly here?) but with much cooler merchandise.

And now a chocolate recipe from Gerard! I only have about a dozen questions --

: Try this, 1 lb choc melted with 5 oz butter.

Unsweetened and unsalted, respectively, yes?

: WHip 4 eggs with spoonfull of sugar.

Whole eggs with a tablespoon of sugar? Never whipped eggs before -- my mind associates that term with egg whites (meringue being a very serious subject down here in the South).

: Fold choc/butter into egg/sugar with spoonfull of flour.

Tablespoon of flour?

: Bake in mold sitting in a tray of water at 400 for 15 minutes.

Glass or metal mold? Is a one-piece cake pan okay (if boring) for the first time? What about a springform pan covered in foil? How far up the sides should the water come? I'd probably go for an inch or two, depending on depth of the mold.

: Remove from freezer after 4 hrs and unmold, use a little heat to get it loose, hope you grease and flour your molds!

How should I go about using a little heat to get it loose? Hold it over a stovetop eye? Stick it in the oven? Use a blow torch? (Don't laugh, we do have a jeweller's torch.) How about a hair dryer? (There's probably one left around here somewhere ... ) Any tips on greasing the mold properly? My default is to use a pastry brush to grease with shortening and then dust with flour. Last but not least, is it best served frozen, refrigerated, or at room temperature? I have a feeling that it would be a disaster to heat this one up in the microwave.

Sorry to be such a pest, but I might as well ask, since there won't be a chance to try it before tomorrow night. All things are scheduled around my daily commute to town, as we live in the country, more or less, where our neighbors raise cows on one side, pigs on the other, thoroughbred horses in back, emus and llamas down the road. And it's hunting season again, so watch out for the deer ... and some of the neighbors!

Susan
