A big amen to you... I am so sick and tired of the people who would have us eat our meat overcooked , and would prefer if all eggs were sterilized, etc. To quote the sitcom CHEF " you know, I do cheese sometimes". Oh Sharon, tell me where you work because it sounds like you care. I imagine the food is nice there. And to the other "Chefs", it's hard to believe that you actually cook for a living. It's a pity that people have to eat your food. Obviously you do not enjoy it. Or maybe I just don't like mass produced institutional food. It's hard to imagine not eating a raw sea urchin, raw oyster, eggs over easy, a rare steak. Perhaps it's that you buy low grade ingredients that need to be irradiated before you can enjoy them. Sharon said nothing in her text that led me to believe that she practices unsafe food handling. I think she is being extremely correct that we can not over react every time the government puts out some warning. I think perhaps we should start analyzing where our food comes from, and what we have done to the food that all of a sudden there are so many aliments caused by it. Maybe we should start buying food from small farmers with integrity rather than large commercial food manufacturers whjo use things like nuclear waste, heavy metal sludge, and other wonderful natural ingredients to fertilize our food sources. Maybe you should spend a little money and buy organic from reputable organic growers. I would venture to guess that if we started to question proiduction methods some of these problems would be solved. But perhaps you are the chef that buys chemically treated sea scallops for god knows what reason. But hey, quality isn't your concern... the bottom line is. You would rather support these practices then be offend by it. As far as proper food handling. I treat my food with respect... I am very concerned about temperatures, cleanliness, quality, integrity, etc.

: I resent the attitude that you are taking here. I am trained, just like you, in food safety. I take precautions. I have never made anyone sick. I don't think it is a big joke, rather I believe that we have a right to safe food and should expect to get it. I hate to see anyone die, but they do from a zillion causes. We can't protect everybody, we just can't.

: I think that you represent a faction of people who are scared to death of the "potential possible risks" in the world.

: Food is our friend. We should eat, enjoy, and not jump around everytime the media "alerts" us to an alleged heath risk. The actual incidence of salmonella is low compared to the actual numbers of eggs being laid and consumed in this country.
