There are inescapeable facts too, its a trade and a learned hand skill, you could study for the rest of your life and know everything but without hands on training you'd have zero skill.

A LOT of the information taught is useless on the job site.
For instance knowing the eggplant is a member of the water lily family is useless info but taught at some of the best schools.
An apprenticeship coupled with some schooling is the best route.
Sooner or later you have to pay your dues, paying tuition doesn't
impart skill.

The better cook will always cook better regardless what either might test in culinary academia.

Those are facts, but my opinion is forget schools, serve an apprenticeship under someone who has the skill and the knowledge, save the tuition for startup capital. Thats what I did.
